Bison Roast stuffed Yorkies....

Lots of requests for this recipe so here you go!! I had used a bison crossrib but any of our roasts will work.


Ingredients

Roast:

· ~3lbs bison roast

· ½ packet Lipton onion soup mix (dry)

· 1-2 cloves of garlic (minced or grated)

· ½ onion diced

· 1.5 cups Water or beef broth

· 2tsp Olive oil

· Salt and Pepper

Yorkshire Puddings: Makes 24 Yorkshire puddings

· 2 cups flour sifted

· 1 tsp salt

· 6 eggs room temp!

· 2 ½ cups milk

· Vegetable or olive oil ( doesn’t really matter but vegetable oil cheaper)

Sauces:

· 2 tbs Horseradish spice level as you wish I use medium

· 1 cup Sour cream

· Chives

· Salt and pepper

· 1tbs Flour or cornstarch

· ½ tbs Bisto Gravy Powder

Instant Pot Instructions:


1. Set instant pot to sauté, when hot add olive oil

2. Add onion and garlic stirring until you start to smell it ~1min

3. Add roast, sauté 2-3min per size there are 6 sides to a roast.

4. Remove roast and deglaze bottom of the pot with your water or beef broth make sure you get all the chunky bits up that’s where the flavor lives

5. Set to high pressure for 30min let depressurize naturally looking for an internal temp of 130-140F

6. While bison roast is cooking preheat oven to 425F

7. In a large bowl and make a well with the flour

8. Add alleggs and whisk while slowly adding milk until smooth

9. Cover and keep in fridge until ready

10. In 2 muffin tins cover bottom with vegetable oil and heat in oven for 5min

11. Give mixture a quick whisk and fill 24 tins 1/3 to half full, it will sizzle a bit

12. Place both pans in the oven and cook for 20min (it will get


smokey so make sure your fan is on!)

13. Remove roast from instant pot wrap in tinfoil and let rest while you make the gravy, make slurry with water, flour or cornstarch and bisto, gradually add it to pot stirring until it thickens, approx. 5min

14. Horseradish sauce, combine horseradish and sour cream and stir

15. Slice roast very thin, distribute over Yorkshires, top with gravy horseradish sauce and chives and enjoy! Pair with your favorite sides. You can’t go wrong with mashed potatoes here, just saying…
